Spring Roots. A Vegan Dinner with Romanian Chefs Gabriel & Gabriela Botezan
Following the smash success of their midwinter vegan meal, Romanian-born chefs Gabriel and Gabriela Botezan are re-setting the Frame table with another plant-based menu reflective of the season, bringing us all the nourishment we need to welcome the sun back for a spell.
Crispy rice with savory shiitake and grilled scallions atop black bean puree, fried sunchokes and romesco, perfectly roasted carrots with bright red cabbage puree and punchy chimichurri… and the centerpiece: a savoy cabbage dome in nourishing mushroom broth with barley. Although the real star of the show might just be Chef Gabby’s chocolate and raspberry tart so decadent you have to taste to believe.
As always, it’s all expertly paired with a thorough vegan beverage pairing by Frame’s Mixtress Jaz’min Weaver and sommelier Sean Crenny.
