Meet: Rob Carter from Vie, named for the French word for life, Vie by Chef Paul Virant. Chris Schwellenbach of Bellemore, part of The Boka Group in Chicago’s West Loop, rocking out Artistic American fare. And Victoria Ascencio of Spiaggia, modern Italian fare under the direction of James Beard Award Winning Chef-Partner Tony Mantuano Pescatarian. One-Night.
